Rosa Mexicano at the Dolphin Resort

I don’t know how this has happened, but we’ve NEVER made it over to the Swan and Dolphin. If you aren’t familiar, these are resorts that are not owned by Disney, but they are on Disney property and come with alot of perks that you would get by staying on property.

I always knew they were in the Epcot resort area, but I never realized HOW close! These resorts are only about a 15-20 minute walk from the back entrance of Epcot! (That’s about as close as the Polynesian is to Magic Kingdom)

A BRAND new restaurant just opened at the Dolphin a few weeks ago and we got a chance to try it. Rosa Mexicano is a traditional Mexican style restaurant featuring bold flavors and exciting dishes.

Each delectable dish is crafted with care to celebrate Mexican heritage—and honor the culinary techniques, global explorations and inspirations of Chef Josefina Howard, who founded the original Rosa Mexicano restaurant in New York City in 1984.”

The theming here is super festive and classy and had an airy bright feel to it.

We of course had to start with some cocktails. I had the Spicy Cucumber Agave Margarita and HOLY COW was this delicious! It was very light and refreshing and had the perfect amount of kick to it. I did notice that alot of the dishes here have a good bit of spice, but more on that later!

We also got the Old Fashioned Al Gusto with Tequila. It was basically an Old Fashion and a Margarita combined. It had a lighter fruitiness that you don’t normally get with an Old Fashion, but it worked really well in this drink!

There were a ton of yummy appetizers on the menu, but you HAVE to get the Tableside Guacamole. There are several different types if you want toppings like Grilled Pineapple Pico or Bacon & Cojita, but we opted for the classic. Since there were four of us, we got the double, and it was a pretty great portion.

This guac had all the yummy mix ins to make it chunky and full of flavor. The Avocado was perfectly ripe and this did have some spice to it. It was pretty funny - I would eat some guac, then because it is spicy I would take a swig of my cocktail… but it was also spicy…. Luckily I had water too!



For our entree, I got the Birria Quesatacos. These were super filling and so so so good! They had tons of meat and the dipping sauce was full of flavor. My only complaint was that these were very messy. But honestly, I think that’s to be expected.

We also got the three enchilada sampler with Duck Carnitas, Pasilla Roasted Mushroom, and the Beef Brisket. The Duck was by far the star of the show. Duck is always a favorite of ours and we were delighted to see that they had several duck dishes on the menu! This also came with Mexican Rice. I personally wasn’t a fan of this, but since it comes with the dish, it wasn’t a big deal. (the enchiladas will fill you up plenty on their own)

They did have some desserts, but we opted to grab some shakes at the nearby Fountain.

Overall, we were very pleasantly surprised and will definitely be back! You can make reservations for this restaurant up to 60 days in advance. Since this one is more out of the way, you may be able to find walk-up availability, but I recommend grabbing a reservation if you can!

Our friends opted for the Parrilladas (which is basically fajitas)
